Favorite Bolivian Meals

Quinoa Quiche
Boil the quinoa grains until thick and mushy with oil, finely chopped onion, garlic, chopped parsley, and hot peppers.

Bolivian Majao
Charque is like beef jerky, only it is shredded.  When the rice and beef have cooked, serve hot with a fried egg on top and the plantains on the side.



Spicy Cow Tongue (Ají de Lengua)
Boiled tongue slices with sauce, potato, steamed rice, and parsley garnish.


Tawa-Tawas
Remove from frying plan and pour cane honey over them.
